Biography

Ogunsanya Mary Uchenna is a Lecturer II in Biochemistry at the Federal University of Technology Minna, specializing in nutritional and industrial biochemistry with research focuses on food safety, nutrition, and the valorization of agro-wastes for natural food colorant production. She teaches core biochemical courses and has over six years of experience supervising undergraduate research. She is a member of the Nigerian Society of Biochemistry and Molecular Biology.

Sustainable innovations
currently exploring the valorization of agro-wastes as sources of natural food colorants for industrial applications. Her research aligns with global efforts toward circular bioeconomy and environmentally friendly food systems
